BOISE, Idaho — Pink Power Smoothie Bowl
 
If the color "pink" had a flavor, it would taste like this smoothie bowl! The bright pink dragon fruit blends with non-dairy SILK strawberry yogurt, banana and coconut extract for a perfectly pleasant flavor.

Makes:  1 smoothie bowl (about 1 1/8 cup)

Ingredients:
5.3-ounce container SILK strawberry soy yogurt
a few drops coconut extract (add more to taste if desired)
1 cup frozen Pitaya dragon fruit cubes  
1/2 medium banana, sliced (at least 1/2 cup)
garnish: sliced strawberries, shredded unsweetened coconut, ground flax or chia seeds, etc.

Directions:
1. Add a few drops of coconut extract into to the SILK yogurt container and stir with a small spoon.  
2. Add yogurt mixture to a blender or food processor along with the dragon fruit cubes and banana and pulse to blend well. Scrape the sides of the food processor bowl or blender with a spatula and pulse again to completely blend.
3. Transfer mixture to a bowl and garnish the top with sliced strawberries, shaved coconut, and/or ground flax or chia seeds. Enjoy the pink power!

Almond Joy Smoothie Bowl

This smoothie bowl tastes like a healthier rendition of an Almond Joy candy bar! The crave-able flavor comes from blending coconut milk yogurt alternative with almond butter and unsweetened cocoa. The big surprise though is that each serving contains a third cup of frozen riced cauliflower!

Makes:  1 smoothie bowl (about 1 cup)

Ingredients:
5.3-ounce container So Delicious Vanilla coconut milk yogurt alternative (or similar)
1 slightly heaping tablespoon almond butter  
1/3 cup frozen riced cauliflower
1 tablespoon O Organics unsweetened shredded coconut  
1 tablespoon unsweetened cocoa
dash coconut extract (about 8-10 drops)
Optional: 1 tablespoon O Organics Golden Flaxmeal
Optional garnish: unsweetened shaved coconut, mini semi-sweet chocolate chips, toasted sliced almonds
 
Directions:
1. Add all of the ingredients, from coconut milk yogurt to the coconut extract, to a blender or food processor and pulse to blend well. Scrape the sides of the food processor bowl or blender with a spatula and pulse again to completely blend.
2. Transfer mixture to a bowl. If desired, garnish the top with shaved coconut, semi-sweet chocolate chips and/or toasted sliced almonds.
3. Enjoy!
