Pat Mac's Quinoa Black Bean Salad

Pat Mac shows us a recipe for a cold salad that can be made on a moment's notice for that last minute outdoor party invitation or a quick meal to please the family.

Quinoa Black Bean Salad:

1 cup cooked Quinoa

1 15 oz can Garbanzo Beans drained and rinsed

1 15 oz can black beans drained and rinsed

1 8 oz can sweet corn drained and rinsed

1 8 oz can diced green chilis

1/3 cup roasted red peppers chopped

1/3 cup extra virgin olive oil

1 tablespoon garlic herb seasoning

Quinoa directions:

In a sauce pan on a high heat bring 2 cups of water to a boil and add 1 cup of quinoa. Cover and reduce heat to low for 15 minutes. Remove from heat and let it sit for another 5 minutes. Remove lid and fluff with a fork. You can make this a few days in advance and leave in your fridge.

Putting your salad together:

Combine all the ingredients above in a large mixing bowl and stir. Add salt and pepper to your taste. Cover with plastic wrap and refrigerate for up to three days.

You can add cooked chicken to make a full meal out of this also.
