KTVB Kitchen: How to make Kansas City BBQ jackfruit sliders

Jackfruit has the consistency of pulled pork. Chef Lou Aaron used jackfruit to make Kansas City barbecued sliders.

BOISE, Idaho — Chef Lou’s BBQ Jackfruit Sliders


2 tablespoons oil

1 small yellow onion, diced

1 tablespoon garlic, minced

½ teaspoon salt

½ teaspoon pepper

6 oz jackfruit(frozen, thawed)

1 teaspoon chili powder

1 teaspoon paprika

1 teaspoon cumin

1 teaspoon liquid smoke

½ cup vegetable broth

½ cup barbecue sauce

6 slider buns, or dinner rolls

shredded lettuce, optional as needed


Julienne the jackfruit.

In a medium saucepan, heat the oil over medium heat. Once the oil is hot, add the onion and cook for 2-3 minutes, until translucent.

Add the garlic, salt, and pepper, and cook for 1-2 minutes. Add the jackfruit, chili powder, paprika, cumin, and liquid smoke, and mix well. Add the vegetable broth, cover, and cook for 5-8 minutes, until liquid has reduced and it has cooked down.

Use a knife to cut the slider buns in half. Remove the top and set aside. Spread the BBQ jackfruit on the bottom half of the buns, then top with shredded lettuce.

Add the top buns and enjoy!
