All You Need:

2 cups, peaches, or mangos, peeled and diced

1/2 cup roasted Hatch chilis, diced

1 ear fresh corn, grilled or (3/4 cup frozen corn)

2 Tbsp. red onion, diced

2 Tbsp. cilantro, chopped

1/2 of a lime, juiced

Dash of kosher salt (optional)

1/4 tsp chili powder (optional)

All You Do:

Toss together all ingredients in a large bowl.

Serve chilled or at room temperature.

All You Need:

Toss together all ingredients in a large bowl.

Serve on sliced rounds of toasted French bread or crackers.
