Chef Lou’s Orange French Doughnuts


5 Tablespoons Butter
½ Cup Sugar
1 Egg, Beaten
1/3 Cup Milk
½ Cup Ricotta Cheese
Juice and rind from one orange
2 Cups All Purpose Flour
1 teaspoon Salt
1 teaspoon Nutmeg

¼ cup melted butter
1 tablespoon cinnamon mixed w/1 tablespoon sugar


In a mixing bowl, cream together butter and sugar; add egg and mix well. Add Milk and Ricotta to the mixture alternately w/dry ingredients. Mix in orange rind and juice. Fill greased muffin cups to ½ full. Baked in a pre-heated oven at 350 degrees for 15-20 minutes. Cool slightly and pop doughnuts out of pan.
Roll doughnuts first in melted butter, then in the cinnamon sugar mixture.

For variation, you can also garnish with strawberries & whipped cream.

Makes 12 doughnuts.
