INGREDIENTS

8 tablespoons (1 stick) sweet butter

½ cup whole milk

½ cup flour

2 large eggs, or 3 medium eggs

¼ teaspoon vanilla extract

Pinch ground cinnamon

Fresh lemon juice to taste

2 cups fresh peaches tossed with 2 tbls honey or real maple syrup

Powdered sugar for sprinkling

Fruit jam, optional

PREPARATION

Put butter in frying pan or a shallow casserole dish. Place in a preheated 450 degree oven. In a bowl, mix together milk, flour, eggs, vanilla, and cinnamon lightly to make a batter. When the butter is sizzling, add batter to pan and bake for exactly 12 minutes. Remove from oven and transfer to a plate. Squeeze a little lemon juice on the cake to (taste). Layer the peaches on top of the pancake. Sprinkle with powdered sugar and optional serve with ¼ cup of your favorite jam.
