CENTRAL MARKET NACHOS

INGREDIENTS

For meat filling

¼ cup melted butter

¼ cup chopped green onions

½ cup cooked shredded chicken or beef

½ teaspoon minced garlic

1 teaspoon cumin

1 teaspoon chile powder

½ cup refried beans

3 Tablespoons chopped cilantro

¼ cup minced jalapenos

12-16 fried corn tortilla chips

½ cup shredded jack cheese

½ cup shredded cheddar cheese

Salsa, as needed

PREPARATION

Heat butter in pan. Add green onions, chicken, or beef, spices, and refried beans. Stir well. Add cilantro and jalapeno. Set aside.

Preheat broiler. Top each tortilla chip with 1 tablespoon meat filling. Sprinkle equal amounts of the jack and cheddar cheeses on top of the meat. Place on a baking sheet and broil until cheese is melted. Serve at once with salsa, and spiced jicama.

SPICED JICAMA

INGREDIENTS

½ cup minced colored bell peppers

1 tablespoon minced serrano pepper

2 cups jicama julienne

1 cup thinly sliced red onion

Juice & zest from 3 limes

Juice and zest from 2 oranges

Salt & pepper to taste

3 tablespoons fresh chopped cilantro

PREPARATION

Combine all ingredients in a bowl and toss well. Let marinate at least 2 hours before serving.
