Baked Sweet Potato Chips
Olive oil (1/4 cup)
Preheat oven to 400.
Line baking sheets with parchment paper.
Slice sweet potatoes very thin (mandolin slicers work great!)
After slicing, drizzle with olive oil and toss in a bowl with kosher salt.
Place on parchment paper and bake for 20-25min
Rainbow Spinach Salad
Red bell pepper
Yellow bell pepper
Add all ingredients on top of spinach and enjoy!!
Avocado Oil Vinaigrette Dressing
2 tablespoons of Dijon mustard
4 teaspoons apple cider vinegar
1/4 cup of avocado oil
Kosher salt and fresh ground pepper
Whisk together first 3 ingredients. Add salt and pepper to taste!
