Fiesta Jalapeno Feta Bread for Chipotle Chicken Sandwich
1st Place, 2012 Western Idaho Fair

3-1/2 cups flour
1-1/2 teaspoons salt
1 teaspoon sugar
1 package Fleischmann's Rapid Rise Yeast
2 teaspoons vegetable oil
1-2/3 cups ice water
1 (4 ounce) package Feta crumbles
1 fresh jalapeno, chopped
1/2 cup cheddar and spicy cheese

Mix flour, salt, sugar and Fleischmann's yeast in mixing bowl.Add vegetable oil to ice water and stir. Add liquid mix to dry mix and using bread hook, mix until well blended.

Place in greased bowl and let rise.Punch down dough and mix in feta crumbles, chopped jalapeno and cheeses.Place in bread pan and let rise again. Bake at 400 degrees for 30 to 40 minutes. Place skewer in center of loaf to test readiness.

Slice loaf into sandwich slices.Build sandwich with romaine lettuce, chipotle chicken breast, pepper Colby jack cheese, and a tomato cilantro relish.Also great bread for spicy grilled cheese sandwiches!
