Cauliflower Rice Un-Stir Fry

Ingredients:
1/2 head raw cauliflower, (grated to make 3 1/2 cups)
3 green onions (diced)
1 garlic clove, minced (or 1/2 tsp garlic powder)
1/2 teaspoon ginger
3 Tablespoons soy sauce
Non-stick oil spray or I Can't Believe It's Not Butter spray
Optional: Sliced mushrooms or other veggies incl. carrots, cabbage, peppers, peas, etc.
Cooked Chicken, Beef, Pork, Shrimp, Ham, Turkey (or bullion powder for flavor)
2 eggs, beaten

Directions:
Cut cauliflower into flowerets; wash in cold water and drain.
Grate by hand or with food processor.
Spray wok or large flat skillet with non-stick oil spray.
Fry minced garlic (or garlic powder) with finely diced white part of onions for approximately 1 minute.
Add grated cauliflower and fry for 4-5 minutes, stirring constantly.
Add soy, ginger, diced green onion tops, mushrooms (or other veggies) and pre-cooked cubed meat or baby shrimp as desired, or sprinkle 1 Tbsp bullion soup powder.
Stir to mix well and brown a bit. Remove from heat.
Serve hot.
Option: Push mixture to one side of pan.
Add more oil if necessary and scramble eggs in empty side of pan until done but still moist.
Stir eggs into rice mix and remove from heat.
Serves 3-4
