INGREDIENTS AMOUNT

Bacon slices12

Celery ribs, trimmed 3

Yellow onion, diced1

Green bell pepper, diced1

Garlic, fresh minced1 tablespoon

Cumin, ground1 teaspoon

Tomatoes, diced in juice(canned) 2 cups

Water6 cups

Tomato Sauce2 cups

Fresh chopped parsley1/4 cup

Sugar, granulated2 teaspoons

Salt1 tablespoon

Cayenne Pepperpinch

Worcestershire sauce2 tablespoon

Oregano1 teaspoon

Cracked Black Pepper1 teaspoon

Iceberg lettuce, thin shredded 3/4 lb

Croutons, seasoned use for garnish

Method

Cook Bacon slices. Chop bacon and set aside. Reserve grease. Pour grease into soup pot. Add celery, onion, bell pepper, & garlic. Cook for 5 minutes, stirring frequently. Add chopped bacon and remaining ingredients to pot except lettuce & croutons. Bring to a boil, then turn heat to simmer and cook for 10 minutes. To serve, ladle soup into bowls.Place 1/2 cup shredded lettuce in each bowl. Sprinkle 2-3 croutons on top. Makes 3/4 gallon.
