2 tablespoons flour 1 pound fresh blueberries 1 cup flour 2-1/2 tsp. baking powder ¼ cup sugar Pinch salt 1 beaten egg ½ cup milk 2 teaspoons vanilla extract Powdered Sugar Vegetable Oil
Combine flour, baking powder, sugar, and salt in bowl. Mix well. Combine egg milk and vanilla; gradually add milk mixture to flour mixture; stir until smooth. Fold in blueberries. Heat oil to 375 degrees. Drop 3-4 scant ¼ cupfuls of batter at a time. Cook about 2 minutes until golden brown on 1 side; turn fritter over and cook for about 2 more minutes. Remove with slotted spoon and let drain. Sprinkle powdered sugar over fritters. Makes about 1 dozen fritters.
