Zucchini Potato Fritters
Ingredients
½ pound zucchini (about 2 medium), unpeeled & grated
½ pound potato (about 1), unpeeled and grated-rinsed & dried
1 tablespoon parsley flakes
2 tablespoons minced green onions
1-cup pancake mix
1 egg, beaten
Salt & Pepper to taste
1 tablespoon dried basil leaves
2 tablespoons sugar,(optional)
2-cup vegetable oil
Method
Mix first 9 ingredients, stirring well. Drop mixture into hot oil (375 degrees or medium heat) cook until golden brown, turning once. Drain on paper towels. Serve with honey mustard(recipe below)
To make honey mustard: combine ½ cup honey, ¼ cup Dijon mustard, and 1 teaspoon Cayenne pepper until smooth.
