 SPINACH SALAD W/ SAUSAGE & ORANGE DRESSING

 
 
Ingredients                                                              Amount
Fresh Spinach, Cleaned                                                               4 cups
Red onion, julienne                                                                     1/4 cup
Julienne slice Jicama(carrots can be subbed or added)       1/4 cup
Pineapple, diced                                                                         1/4 cup
Smoked Sausage, your favorite brand, Cooked & sliced in 2” planks 1 lb
Pepper                                                                                         to taste
 
 
Mix first four ingredients together in a bowl. Add dressing (see recipe below) and toss well. Transfer to serving dish. Lay sausage on top of salad. Sprinkle pepper to taste. Makes 2 salads
 
 
Citrus Dressing
 
½ Cup Orange Juice
¼ cup Minced Onion
2 ounces Red Wine Vinegar
½ cup brown sugar
Rind from 1 orange
½ teas dry mustard
½ teas salt
½ teaspoon soy sauce
½ cup vegetable oil
 
Mix all ingredients together in a food processor or blender until smooth.
