P. Allen Smith's Potato Salad
3 pounds or 25 small to medium red potatoes
Wash, slice & boil them with their jackets on for about 20 minutes until they are soft
Rinse with cold water
Mix 1 cup of chopped Vidalia onion with 1 cup of mayonnaise, 1 cup of sour cream and an 8 ounce package of cream cheese.
Add 1 1/2 tablespoons of dill, 1 teaspoon of Beau Monde seasoning and 1 tablespoon of chopped fresh parsley.
After folding all of the ingredients, chill for at least a few hours before serving.
