Oatmeal Butterscotch Breakfast Nuggets

Makes 4 dozen.
 
1 c white whole wheat flour
½ t baking soda
1 t baking powder
½ t salt
1 c brown sugar
¼ c plain yogurt
2 eggs
2T butter melted
1½ t vanilla
1½ c oats
3 T whole flaxseed
½ c butterscotch chips
½ c chocolate chips
Heat oven to 375 degrees. In a small bowl, combine flour, soda, powder and salt. In a larger bowl, mix brown sugar, yogurt, eggs, butter and vanilla. Add flour mixture to wet mixture and then oats, whole flaxseed and chips. Bake for 10 minutes. These cookies will be soft due to the low amount of fat.
 
Nutrition per cookie: 60 calories, 2 g fat, 1 g saturated fat, 9 g carbs, 1 g protein, 1 g fiber, 48 mg sodium.
