Pot of Gold Maple Hazelnut Oatmeal
*this oatmeal is prepared the night before in a crock-pot
1.5 cups skim milk
1.5 cups water
2 apples, cut into 1/2” cubes
1 cup steel cut oats
2 T brown sugar
1 T softened butter
¼ t cinnamon
¼ t salt
cooking spray (you really need this or you’re left with “stuck” oatmeal)
¼ cup maple syrup
2T chopped hazelnuts
The night before your Pot Of Gold breakfast, bring the milk and water to a boil in a saucepan over medium heat, stirring a lot.
Place milk mixture, apples and ingredients through salt in a crock-pot coated with spray, and stir.
Cover with lid and cook on low heat setting 7 hours.
Spoon oatmeal into bowls and top with nuts and syrup and even yogurt.
Nutrition per serving: 330 calories, 8 g fat (2.5 g saturated fat), 10 g protein , 60 g carbs, 6 g fiber, 63 mg sodium.
