Maple Bacon Oven Pancakes

Ingredients
2 eggs beaten
1-cup milk
¼ cup maple syrup
1½ cups biscuit mix
1 tablespoon granulated sugar
1-1/2 cups shredded cheddar jack cheese
12 slices cooked and crumbled bacon

Method
In a mixing bowl, whisk together eggs, milk, and syrup. Add the biscuit mix, sugar, and ½ cup cheddar cheese and mix well. Pour into greased 13 x 9 x 2 baking dish. Bake at 425 degrees for 12 minutes. Sprinkle pancake with remaining cheese and bacon bits. Bake another 3-5 minutes. Cut into squares and serve with maple syrup.
