Grilled Asparagus with Candied Walnuts over Arugula

Grilled Asparagus with Candied Walnuts over Arugula
2 teaspoons olive oil
1 clove garlic, minced
1/2 bunch asparagus, cut into 2-inch pieces
2 cups spring greens
1 Tablespoon candied walnut halves (recipe below)
2 t olive oil
1 Tablespoon balsamic vinegar
Salt & pepper, to taste
Saute asparagus in oil and garlic for 5-6 minutes. Top spring greens with cooked asparagus, walnuts, oil & vinegar & salt/pepper.

Candied Maple Walnuts

1 teaspoon whipped butter
1 Tablespoon 100% maple syrup
1/2 cup walnut pieces
Salt, to taste
Over medium heat, sauté margarine, maple syrup, walnuts, cayenne, and salt in skillet. Stir until walnuts are browned, about 5 minutes. Set aside to cool.
