Easter Fruit Salad with Ham & Cheese Rolls and Banana Poppyseed Dressing

For Ham & Cheese Rolls
4-1 oz slices ham
4-1 oz slices provolone cheese
2 tablespoons cream cheese

Lay ham slices on a flat surface.
Thin spread cream cheese on each slice.
Place one slice provolone cheese on top of ham slice.
Roll tightly, jellyroll fashion.
Chill one hour.
Cut on a bias into ½ inch slices.

For Fruit
Cut and peel your desired melons, pineapples, and hull the strawberries.

Using a crinkle cutter knife (available in most kitchen stores),
Cut the melons & pineapples into sticks resembling French fries.
Slice the strawberries in half.

To serve, lay some lettuce leaves on a platter as a liner. Arrange the fruit on the plate and surround the fruit with the ham & cheese pinwheels. Serve with the poppyseed dressing on the side.

For Poppyseed Dressing

In a mixer combine...
1 cup sour cream
¾ cup powdered sugar
2 oz. vanilla
2 tablespoons honey
2 tablespoons poppyseeds
1 mashed banana

Mix well
Cover tightly and refrigerate
