Ingredients
3-1/3 cups all-purpose flour
2-1/2 cups sugar
2 tsps baking soda
1-1/2 teaspoon salt
1 teaspoon nutmeg
1 teaspoon cinnamon
1 cup walnuts, chopped

4 eggs
3/4 cup salad oil
2 cups grated zucchini
2 teaspoons vanilla extract
2 teaspoons grated lemon peel
2/3 cup water

Method
Preheat oven to 350 deg F. Grease two 8 1/2 x 4 1/2" loaf pans. 

In large bowl with fork, mix flour, sugar, baking soda, salt, nutmeg, cinnamon, & walnuts.

In a medium bowl, beat eggs slightly. Stir in salad oil, zucchini, vanilla extract, lemon peel & water.

Stir liquid mixture into flour mixture just until flour is moistened.

Spread evenly in pans. 

Bake for 1 hour.

Cook in pans on wire racks 10 minutes.

Remove from pans. Serve warm or cold.
