Strawberry “Pop” Fritters
1 1/2 cup Pancake Mix
1/2 cup Milk
1/2 Apple juice
1/4 cup Toasted Coconut
12 Fresh Strawberries
1/2 cup Toasted Almonds
1/3 cup Cream Cheese
Vegetable Oil as needed
1/2 cup Chocolate syrup
Mix pancake mix, milk, apple juice, and coconut well. Refrigerate until ready to use. (If mix becomes too thick, add more milk to thin).
Pat strawberries dry. Cut them in half.
Press an indentation in one half of the berry about a ¼ inch deep.
Mix the almonds with the cream cheese to form a paste.
Place about 1 teaspoon almond cream cheese in the indentation.
Place top half of strawberry over the almond cream cheese.
Secure the berry with a toothpick or wood skewer.
Repeat process with remaining strawberries.
Carefully lay the strawberry into the batter and coat well.
Heat oil in heavy bottomed skillet.
Lightly place strawberries in oil.
They will brown very quickly so don’t drop very many in at one time or you’ll have a mess on your on hands!
Turn them to brown all sides.
Drain on paper towels.
Serve with chocolate sauce and sprinkle with powdered sugar.
