Chef Lou's Spinach, Apple & Bacon Salad Ingredients Juice from 2 lemons ½ cup Olive Oil 2 teaspoons sugar 2 tablespoons each chopped fresh basil & parsley Salt & Coarse ground Black Pepper, to taste 5 cups spinach leaves 1 Apple, cored and diced but not peeled 1 cup thinly sliced red onion 1/3 cup diced roasted red peppers ½ Cup Chopped Cooked Bacon 12 Parmesan cheese Crisps, (made by placing 1 teaspoon shredded parmesan cheese on a cookie sheet(repeat this step 11 more times) and placing the cookie sheet in a preheated 350 degree oven for about 5 minutes, or until Parmesan becomes a golden brown) Method In a large bowl, whisk together the lemon juice and olive oil. Add sugar, basil, parsley, salt & pepper. Add remaining ingredients, tossing well. Adjust seasoning. Serve on a large platter or individual bowls. Top with Parmesan crisps. Makes 5 small or 2 large entrée size salads
