Sesame Chicken w/ Peanut Sauce
2 Tablespoons olive oil
1 tablespoon fresh minced garlic
¾ cup minced yellow onion
¾ cup diced red pepper
½ fresh jalapeno, minced with seeds
1 cup Chicken Broth
½ cup peanut butter
½ cup heavy cream
Salt & Pepper, to taste
1 lb. Chicken Breasts, cut into ½ inch X 4 inch strips
2 tablespoon chopped fresh Garlic
2 teaspoon Oregano leaves
2 teaspoon coarse ground black pepper
1 tablespoon Soy Sauce
Toasted Sesame Seeds, for garnish
Heat oil in skillet over medium heat.
Add onion, bell pepper, and jalapeno, and cook, stirring frequently, until the onion is nearly transparent, about 8 minutes.
Add the broth, and then stir in the peanut butter & heavy cream until well mixed.
Reduce heat to low, and simmer until the sauce has thickened.
Add salt & pepper to taste.
While sauce is cooking, prepare chicken.
Drizzle with oil.
Rub garlic into strips and then rub in oregano & black pepper.
Heat a pan or bbq broiler.
Cook until done, and serve strips on peanut sauce.
Sprinkle with sesame seeds, and serve with thin shredded lettuce.
