Chef Lou's Pinto Beans & Ham Steaks


Serves 3-4

Ingredients:                                          
3/4 cup Bacon, diced 1/4 inch                                  
2-3 slices Ham Slices, ¼ inch thick               
1 cup Colored bell peppers, diced 1/2 inch               
¾ cup Diced yellow onion                                     
2 cups Pinto beans, cooked                                      
1 cup Tomato juice                                       
1 cup Diced tomatoes                                      
to taste Salt & pepper                                          
2 teaspoon Ground cumin                                           
2 teaspoon Chili powder                                               
2 teaspoon Granulated garlic                                      
to taste Jalapeno peppers, seeded & minced               
to taste Fresh chopped cilantro                                 



Method:

Place bacon in a large saucepan and cook for 10 minutes over medium high heat, Add Ham slices and brown on both sides. Remove ham slices, and set aside. Add bell peppers, onion and cook for 2 more minutes. Add remaining ingredients except the jalapenos and cilantro and bring just until boiling. Turn heat down and simmer for 10 minutes. Place ham steaks back into pan and coat in beans. Add cilantro and jalapenos and serve immediately.
