Chef Lou’s Pennsylvania Dutch Tomatoes
4-6 tomatoes, ripe but firm
Flour to coat
4 tablespoons butter
4 tablespoons vegetable oil
½ cup lightly packed brown sugar
1 cup heavy cream
Salt & black pepper, to taste
3 slices raisin toast
Optional 6 strips cooked bacon
Cut the tomatoes in half and sprinkle salt & pepper over tomatoes. Press both sides of tomatoes into flour. Place the butter and oil in a skillet. Heat the oil. Sauté the tomatoes and while they are browning on one side, sprinkle the other heavily with the brown sugar. Turn carefully over. And sprinkle brown sugar on turned side. As they cook, the brown sugar will caramelize and blend with the flour. When they are browned on both sides, add the cream and simmer 3 –4 minutes.
Serve on Raisin Toast or plain toast and garnish with bacon strips.
