Chef Lou’s Old Fashioned Oatmeal Pancakes
Ingredients
2 Cups Rolled Oats
2 cups Buttermilk
2 eggs, lightly beaten
¼ cup butter melted and cooled slightly
½ cup raisins
½ cup flour
2 tablespoons sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
¼ teaspoon salt
Method
In a bowl combine the oats and buttermilk; stir to blend well. Cover and refrigerate overnight.
Just before cooking, add eggs, butter and raisins. Stir just until blended.
In another bowl, stir together the flour, sugar, baking powder, soda, cinnamon, and salt. Add to the oat mixture.
If the batter seems too thick, add more buttermilk (up to ¼ cup). The batter will be thicker than normal pancake batter.
Preheat a griddle. Grease slightly. Spoon the batter in ¼ cupfuls and spread out to 4 inch circles.
Cook until top is bubbly and look dry. Turn and cook other side until browned.
Serve with syrup, honey or whipped cream.
Makes a little over a dozen pancakes.
