Chef Lou’s Hamburger Pie
1-1/2 Lbs Ground Beef
1 Cup Chopped Celery
1 Cup Diced Green Peppers
1 Cup Chopped Onion
¾ Cup Chopped Green Onion
1 Teaspoon Dill Weed
1 Teaspoon Seasoning Salt
1 Teaspoon Black Pepper
1 Teaspoon Paprika
2 9-inch Pie Shells
1 lb. Ricotta Cheese
2 Tablespoon Chopped Parsley
6-8 Slices Tomatoes(1 Tomato)
4 Tablespoons Grated Parmesan Cheese
Sour Cream, Optional
Sliced Avocado, Optional
Brown ground beef.
Drain most of grease out of pan.
Add the celery, peppers, both onions, and all spices.
Cook over medium heat for avbout 5 minutes.
Spoon Beef mixture evenly into 2 9inch pie shells.
(prebake the shells about 4 minutes at 350 degrees to prevent the shell from becoming soggy).
Whip together the ricotta, eggs, and parsley.
Spread evenly over top of beef mixture.
Lay the tomato slices evenly over the ricotta.
Sprinkle the Parmesan evenly over the pies.
Bake in a preheated 350-degree oven for about 25-30 minutes.
The pie will turn golden brown.
Take out of oven and slice accordingly.
Top with a dollop of sour cream and avocado slices.(Optional).
Each pie serves 3-4.
The pies freeze very well.
