Chef Lou’s Brie & Ham Sandwiches
8 slices white bread
4 slices (1 oz each) Brie Cheese
4 thin slices Ham
½ cup minced chopped olives
Pepper to taste
1 cup flour
3 beaten eggs
1 cup dried bread crumbs
Vegetable oil, as needed
Lay out 4 slices of bread on a flat surface.
Lay ham slices on a flat surface.
Place brie in center of each slice of ham.
Place olives on top of brie.
Sprinkle with pepper.
Fold Ham into a 1 inch square and lay on piece of bread.
Top with remaining slices of bread.
Press down on each sandwich with the palm of your hand and using a 3” cookie cutter,
cut sandwiches into circles.
Discard the scraps.
The Brie and ham should be pocketed within the bread.
Put the flour, eggs, and bread crumbs into separate bowls.
Dip the sandwiches, one at a time, into the flour, then eggs,
then bread crumbs, pinching the edges together.
Dip in eggs and bread crumbs again if they do not appear to seal.
Heat oil in skillet.
Fry sandwiches in oil until brown, turning once (about 45 seconds each side).
Remove from oil, drain on towels.
Keep warm until ready to serve.
Serve with flavored mayonnaise.
To make flavored mayonnaise, combine 3/4 cup mayonnaise,
2 teaspoon lemon juice, 1 teaspoon Seasoning salt or
1 teaspoon Cajun seasoning and pinch black pepper.
