B. L. T. SOUP
 
 
INGREDIENTS                                                                                             AMOUNT
 
Bacon slices                                                                                              12
Celery ribs, trimmed                                                                                 3
Yellow onion, diced                                                                                  1
Green bell pepper, diced                                                                        1
Garlic, fresh minced                                                                                 1 tablespoon
Cumin, ground                                                                                           1 teaspoon
Tomatoes, diced in juice(canned)                                                         2 cups
Water                                                                                                         6 cups
Tomato Sauce                                                                                          2 cups
Fresh chopped parsley                                                                           1/4 cup
Sugar, granulated                                                                                    2 teaspoons
Salt                                                                                                             1 tablespoon
Cayenne Pepper                                                                                       pinch
Worcestershire sauce                                                                              2 tablespoon
Oregano                                                                                                     1 teaspoon
Cracked Black Pepper                                                                              1 teaspoon
Iceberg lettuce, thin shredded                                                               3/4 lb
Croutons, seasoned                                                                              use for garnish           
 
 
Method
Cook Bacon slices. Chop bacon and set aside. Reserve grease. Pour grease into soup pot. Add celery, onion, bell pepper, & garlic. Cook for 5 minutes, stirring frequently. Add chopped bacon and remaining ingredients to pot except lettuce & croutons. Bring to a boil, then turn heat to simmer and cook for 10 minutes. To serve, ladle soup into bowls. Place 1/2 cup shredded lettuce in each bowl. Sprinkle 2-3 croutons on top.   Makes 3/4 gallon.
