Ingredients

8 Tablespoons (1 Stick) Sweet Butter

½ Cup Half & Half or Whole milk

½ All Purpose Flour

2 large eggs, or 3 medium eggs

¼ teaspoon vanilla extract

Pinch ground Cinnamon

Fresh Lemon Juice to taste

Powdered Sugar for sprinkling

Your Favorite Jam or Preserves

 

Method-

Put butter in frying pan or a shallow casserole dish. Place pan in a preheated 450-degree oven. In a bowl, mix together milk, flour, eggs, vanilla, and cinnamon lightly to make a batter. When the butter is sizzling, add batter to pan and bake for exactly 12 minutes. Remove from oven and transfer to a plate. Squeeze a little lemon juice on the cake to (taste).  Sprinkle with powdered Sugar and top with ¼ cup of your favorite jam or preserves.
