Chef Brenda's Funky Soft Shell Tacos

Makes 8 Tacos

Taco Seasoning:

½ tsp salt

½ tsp garlic powder

2 tbsp chili powder

1 tbsp cumin

1/16 tsp chili pepper flakes

1 tsp oregano

1 tsp paprika

Or use 1 package taco seasoning*

1 tbsp olive oil

1 cup onions, chopped

1 cup regular lentils, rinsed

3 cups vegetable stock

½ cup light sour cream

1-2 tbsp hot sauce (optional)*

8 small whole grain tortillas

1 cup tomatoes, diced

1 ¼ cup lettuce, shredded

4 oz cheddar cheese, shredded


1.       Mix taco seasoning ingredients well.

2.       Heat oil in a large skillet over medium-high heat.  Cook onions until they begin to turn opaque.  Add lentils and taco seasoning to the skillet.  Cook for one minute, while stirring constantly.  Add vegetable broth; bring to a boil.  Reduce heat to medium, cover and simmer until lentils are tender, about 25 minutes.

3.       Mix sour cream with hot sauce, if choosing to do so.

4.       Uncover lentils and cook until liquid evaporates, about 5 minutes.

5.       Spoon ¼ cup lentils into each taco shell.  Top with 1 tbsp sour cream, lettuce, tomato and cheese.
