Macadamia Nut Sweet Potato Balls
1 large orange sweet potato
½ tbsp honey or agave nectar
1 oz goat cheese
1/3 cup macadamia nuts, chopped
Preheat oven to 400°F. Bake sweet potato for 45 minutes or until tender throughout. Or cook in the microwave for 10 minutes. Remove skin and mash the sweet potato with goat cheese and honey/agave nectar. Make 12 sweet potato balls and roll each one into chopped macadamia nuts. Serve warm.
12 cherry tomatoes
12 bite size lettuce pieces
3 tsp low-fat mayonnaise
4 slices bacon, cooked, not too crisp
Cut each slice of bacon into three pieces. Slice tomatoes in half. Remove the seeds and membranes from one half of each tomato, then fill with ¼ tsp low-fat mayonnaise. Place the lettuce and bacon between the tomato halves. Slide a toothpick through each BLT bite to hold them together.
12 small marshmallows
12 green grapes, stems removed
Slice stems off each strawberry, creating a flat surface. Slice the banana into 12 slices. On a toothpick first add the marshmallow, then the strawberry (starting through the bottom of the strawberry), then the banana, then the grape. Note: if you are not serving immediately, toss the banana in orange or lemon juice to keep it from browning.
