Here is health and wellness coach Katie Hug's recipe for her superfood salad.

Katie’s Superfood Salad

Ingredients:

Watercress or Spinach

Bell peppers - all colors

Carrots

Cucumber

Parsley

Red onion

Cherry tomatoes

Purple cabbage

Feta cheese

Fresh lemon juice

Olive oil

Cracked pepper

Sea salt

Directions:

Dice all veggies, add the amounts you want! Once all are diced, add to bowl and mix together.

For dressing: Add equal parts of olive oil, lemon juice, salt and pepper to taste! Mix and pour over the salad. You can also add a different dressing of your choice!
