Healthy Mother's Day breakfast ideas.

BOISE - Mother's Day is one of the busiest days of the year for restaurants. Save mom from the lines and crowds and make her a relaxing breakfast in bed!

These breakfasts are simple enough for even the littlest kitchen helpers to tackle.

Molly Tevis - the in-store retail dietitian for Albertsons in Eagle - stopped by the KTVB studios to show us how.

All You Need

¼ cup fresh, ripe raspberries
½ cup Open Nature vanilla Greek yogurt (or overnight oats)
½ cup mix fresh blueberries, blackberries, and strawberries cut into large chunks
¼ tsp lemon zest (optional)
1 tsp O Organic unsweetened shredded coconut

All You Do

1. In a small serving bowl, add raspberries and mash them with the back of a fork.
2. Scoop in the Greek yogurt, and fold it in with the raspberries, swirling once or twice.
3. Make a small well in the middle to scoop in the berries. Sprinkle lemon zest and coconut on top of the berries. Serve to mom with a spoon and a smile.

The Sweet Tooth Toast

All You Need
1 slice Mom’s favorite whole grain bread
1 Tbs ricotta or cream cheese
2 plump ripe strawberries, sliced
1 Tbs raw & unsalted almonds, chopped and toasted 
1 tsp O Organics® honey

All You Do

1. Lightly toast bread.
2. Spread evenly with ricotta.
3. Layer on sliced strawberries
4. Sprinkle with toasted almonds (toasting them makes all the difference), and drizzle with honey. Delicious. Note: Toast almonds at 400 degrees F for 5 minutes or until lightly browned
