Eureka! Watermelon Salad

BOISE - Eureka! Watermelon Salad

¾ cup arugula
¾ cup kale salad mix
1.5 oz. lemon vinaigrette
½ cup quinoa (cooked)
1 Tbsp diced cucumber
1 Tbsp chopped green onions
1 Tbsp diced tomato
1 Tbsp shredded carrot
1 Tbsp diced red bell pepper
1 Tbsp dried cranberries
1 cup cubed watermelon (1” x 1”)
2 Tbsp chopped walnuts (roasted)
3 Tbsp Feta cheese
1 oz. balsamic glaze

Procedure:  
1.  Toss the arugula and kale salad mix with lemon vinaigrette.
2. Gently fold in quinoa, cucumber, onions, tomato, carrot, pepper, cranberries and watermelon into arugula/kale mix.
3. Sprinkle with toasted chopped walnuts and Feda cheese. Lightly pour on balsamic glaze.
4. Serve chilled.
