Chicken burrito bowl

Certified personal trainer and health and wellness coach Katie Hug shares her tips on meal prepping for healthy eating. Today she shows her chicken burrito bowl recipe.

INGREDIENTS

1 cup brown rice
1 tablespoon olive or avocado oil
1 1/2 pounds ground chicken
1 Packet of fajita seasoning 
1 can of reduced sodium black beans (rinsed)  
1 can corn (rinsed)

OPTIONAL TOPPINGS

Tomato
Red onion
Bell peppers (any colors)
Avocado 
Jalapeños 
Radishes
Cilantro 
Salsa 
Light sour cream 
Mexican cheese mix
Limes

DIRECTIONS

Start cooking brown rice (or warm brown rice bags!)

Cook ground chicken in oil and fajita seasoning. Add red onions and peppers when chicken is almost cooked. Cook chicken and pepper mix completely, and let simmer for 5 min. 

Place 1 cup of brown rice in the bottom of containers, add approximately 1 cup of chicken fajita mixture on top of rice. Add toppings you would like on top and enjoy!!
