BOISE -- The Boise Pie Co. & Eatery has only been open on Orchard Street for a little bit over a month, but it has already made a huge impact in the community.
For Thanksgiving, they baked more than 500 pies and actually had to stop taking orders at one point!
Owners Bridgette and Terrance McAbee moved to Boise from Key West, Florida and noticed there was a need in the area for homemade, fresh pies. (Who doesn't need pie right?)
The couple uses their previous hometown as inspiration especially for one of their best sellers, Key Lime Pie. Bridgette says they get the limes shipped to Boise to make sure their customers are eating authentic ingredients.
Other favorites include the Chocolate Chess Pie and the Peanut Butter Pie. The baking starts at 4 a.m. and there are usually about 10 different pies ready for customers each day but by 3 or 4 in the afternoon, they sometimes run out.
One of the best parts about the Boise Pie Co. is that you don't have to order the whole pie. You can order by the slice and if you want to try different pies you can order what's called a pie flight which comes with three slices.
If you're not in the mood for pie, they have a sandwich menu including their top-seller Cuban sandwich "The Tampa" as well as a soup of the day. They also make Chicken Pot Pie and Shepard's Pie. Remember, everything is made in house, fresh everyday.
