Seared Salmon Salad with Creamy Dill Dressing
Ingredients:
4 each -4 ounce Salmon Fillets
2 tablespoons Olive Oil
Salt & Pepper, to taste
For Dressing
¼ cup Red Wine Vinegar
1/8 cup Olive Oil
1 tablespoon Whole Grain Mustard
2 teaspoons Fresh minced Garlic
1 teaspoon dried Dill Weed
Salt, to taste
Pepper, to taste
¾ cup Heavy Cream
For Salad
6 cups Salad Mix
Lemon Wedges
Toasted Sesame Seeds
Method:
Brush salmon pieces evenly with olive oil. Sprinkle to taste with salt & pepper. Cook salmon in a large skillet over medium high heat about 3 minutes each side.
Combine vinegar and next 6 ingredients in a medium bowl; slowly add heavy cream, stirring until well blended. Combine greens and half dressing, tossing to coat. Place on a large serving platter. Top with warm salmon fillets. Serve or top with remaining dressing. Garnish with lemon wedges and sesame seeds, if desired. Serves 4
