Winning Veggie Bowl

Serves 4

2 cups cooked brown rice or lentils

1 head broccoli, cut-up

1 pepper, sliced

1 cup cabbage, shredded

½  cup shredded carrots

½ cup mushrooms

3 T plain, Greek yogurt

1 T olive oil mayonnaise

¼ heaping t Sriracha sauce

½ t cumin

¼ t turmeric

Dash cayenne pepper

Dash salt and pepper

Squirt lime juice

1 avocado, sliced

Cook brown rice or lentils in boiling water for 20-30 minutes. Heat wok to medium-high heat and add vegetables with splash of water so they don’t stick. Cook for 3-4 minutes.

Crumble firm tofu into the cooking vegetables and cook for another 3 minutes.  Add ingredients from yogurt to lime juice for the spicy sauce.  In a bowl add cooked rice/lentils on bottom, set cooked veggies on the side, toss the entire dish in 1 T of sauce, finish with avocado slices.
