Christmas Applesauce Fruit Cake in a Can
1/2 Cup margarine, room temperature
1 Cup sugar
1 1/2 Cups chunky applesauce
2 Cups flour
1/2 tsp. salt
1 tsp. soda
1 tsp. ground cloves
1/2 tsp. ground nutmeg
1 tsp. cinnamon
1/2 Cup golden raisins
1/2 Cup chopped nuts
1/2 Cup chopped candied red and/or green cherries
Grease and flour 4 empty soup cans.
Shake out excess flour. Set aside. Cream margarine and sugar.
Stir in applesauce.
Toss ¼ cup of the flour with the golden raisins, nuts and cherries.
Stir into applesauce mixture.
Sift remaining flour and the salt, soda, cloves, nutmeg and cinnamon together.
Fold into creamed applesauce mixture and stir until smooth.
Turn into cans, dividing evenly.
Place a pan of water on the bottom rack of oven.
Place cans on a pan on middle rack of oven. Bake at 325ºF for approximately 45 minutes–1 hour, until a wooden pick inserted in middle comes out clean.
Remove from oven and let cool about 15 minutes.
Puncture bottom of can to release cakes and cool thoroughly before wrapping in plastic wrap, then colored cellophane wrap.
Makes 4 cans.
