Watermelon Mint Salad

Watermelon Mint Salad

Five pound seedless watermelon cut into bite-size pieces.
Cut one Vidalia onion into thin rings and set aside.
In a small bowl combine ¼ cup red wine vinegar, a few shakes of salt and pepper and whisk until the salt is dissolved.
Slowly whisk in ½ cup extra-virgin olive oil a few drops at a time until it's all combined.
Add 2 tablespoons chopped fresh mint to the liquid mixture.
Now combine the melon, the onion and 4 ounces of crumbled feta cheese.
Pour the dressing over the melon mixture and toss gently until everything is evenly coated. 
Garnish with whole mint sprigs if desired.
