Strawberry and Spinach Salad
6 cups spinach
1 ½ cup strawberries, sliced
8 red onions rings, thinly sliced
¼ cup almonds, chopped and roasted
¼ cup balsamic vinegar, reduced
Toss spinach, strawberries, onion rings, and almonds in a large bowl. Drizzle with balsamic reduction and serve chilled.
To reduce vinegar: pour 1 ½ cups balsamic vinegar in a small sauce pan. Boil for approximately 25 minutes or until vinegar becomes a nectar thick consistency. Cool and drizzle on salad.
