Spinach Salad with Mushrooms and Cashews

Spinach Salad with Mushrooms and Cashews Drizzled in Warm Dressing

1 T fresh ginger
2 T low-sodium soy sauce
2T rice wine vinegar
1/2 cup sesame oil
1/4 cup olive oil

1T olive oil
1 cup shiitake mushrooms, sliced
1 cup edamame beans, shelled
4 cups baby spinach
1/4 cup unsalted, roasted cashews
salt and pepper to taste
In saucepan,combine all dressing ingredients and simmer over medium heat for 5 minutes, set aside.

To prepare salad, heat large saute pan over medium heat, add oil and mushrooms and saute until cooked through. Add edamame and saute to heat through, about 2 minutes. Add spinach, mushrooms and edamame into large mixing bowl, add cashews and drizzle with dressing.
Nutrition information for 1 heaping cup salad + 1 oz dressing: 210 calories, 7 g fat, 1 g saturated fat, 35 g carbs, 2 g protein, 7 g fiber.
