Speedy Supper Scramble
Salt, pepper and Mrs. Dash seasoning (or dried herbs), to taste
1 clove garlic, minced
2 cups frozen vegetables, like pepper and onion mix
1-2 tsp extra virgin olive oil
1 cup leftover turkey or chicken, shredded
1/2 cup shredded cheese
Mix eggs with salt, pepper and Mrs. Dash (or dried herbs).
Heat garlic and vegetables in oil and saute until vegetables are soft. Add turkey/chicken and heat through, about 1-2 minutes.
Pour egg mixture over vegetables and turkey and stir to combine.
Cook eggs through and sprinkle with cheese just before serving. Serve with whole grain toast, try adding any combination of frozen or leftover vegetables you have on hand.
