Rib & Sauce Recipe - Brewforia Beer Market

For Ribs:

3 racks of baby back ribs

 2 lbs Sauerkraut

 1/2 cup brown sugar

2 tbl paprika

2 tbl kosher salt


 Medium ice chest


Preheat oven to 550. Mix spices and rub on all ribs. Pull sheets of foil just longer than each rack of ribs. Drain sauerkraut and divide evenly onto each piece of foil place each rack of ribs on foil and evenly cover top and bottom of ribs with sauerkraut, wrap tightly place on sheet pan and place in preheated oven for 45min. Remove from oven place in cooler seal tightly and keep closed for a minimum 2 hours (NO PEEKING). After 2 hours  remove from cooler save Sauerkraut it makes a yummy side, grill ribs and brush with sauce.

For sauce:

1 onion minced

1/2 cup Apple cider vinegar

1/8 tsp ground clove

1/4 cup brown sugar

 8 oz tomato puree

12 oz crisp hard cider


In a sautee pan add onions and vinegar simmer until onions are tender add sugar and cloves bring to a full boil, transfer to blender and add tomato puree and cider blend until smooth.

Pair with hard cider, sour beers, saisons, or farmhouse ales
