Pork Tenderloin Chimichurri Chimichurri, a popular Argentinian sauce, is an extremely flavorful marinade that goes great on pork tenderloin, chicken and steak. If you've got a fresh herb garden, you're ahead of the game, if not - you can find the following herbs at your local store.
This recipe accommodates 1 lb. of pork.
Ingredients: 3/4 cup chopped fresh parsley
3/4 cup chopped fresh cilantro
¼ cup loosely packed fresh oregano leaves (off the stem)
One tablespoon fresh lime juice
Half tablespoon red wine vinegar
About 3 cloves of garlic,
Pinch of salt and pepper
Pulse all ingredients a few times in a food processor until it's all finely blended. Stir in just a small pinch, about 1/8 teaspoon of red pepper flakes and a few tablespoons of extra virgin olive oil, until it reaches a thick somewhat smooth consistency. Place the chicken in a zip lock bag with a little less than a half cup of the chimichurri and let it marinate for about an hour. Save the rest of the chimichurri to drizzle over your meat after it's grilled.
