In large bowl combine:
1 c candied cherries
1 c candied pineapple
1/2 c golden raisins
1/2 c chopped dried apricots
1/2 c crasins
1/2 c dried blueberries
4 c chopped pecans
2 c shredded coconut
2 c flour
1/2 tsp salt
Mix all the above ingredients well set aside.
In mixer whip 8 egg whites until stiff peaks set aside.
In mixer cream
1 c butter
2 c sugar
Pour whipped eggs in with butter and sugar and gently mix.
Pour all over chopped fruit and flour mixture and hand mix until moist.
Fill small loaf pans and bake until golden brown on top 30 to 40 min.
After cooled put a few tablespoons of coconut rum over top. will store in refrigerator for a month
Occasionally add more rum to keep moist.
Also good with out rum just wrap well and keep refrigerated.
