Melon Salad w/ Ham & Cheese Rolls and Banana Poppyseed Dressing
For Ham & Cheese Rolls
4-1 oz. slices ham
4-1 oz. slices provolone cheese
Place one slice ham on top of one slice provolone cheese. Roll tightly, jellyroll fashion. Chill one hour. Cut on a bias into ½ inch slices.
Cut and peel your desired melons. Using a crinkle cutter knife (available in most kitchen stores or Pampered Chef has them), cut the melons into sticks resembling French fries.
To serve, lay some lettuce leaves on a platter as a liner. Lay the melon sticks on the plate and surround the sticks with the ham & cheese pinwheels. Serve with the poppyseed dressing on the side.
For Poppyseed Dressing
In a mixer, combine:
1 cup sour cream
¾ cup powdered sugar
2 oz. vanilla
2 tablespoons honey
2 tablespoons poppyseeds
1 mashed banana
Mix well. Cover tightly and refrigerate.
