Kiwi Strawberry (Spinach) Pops
Serves 6-8 depending on the popsicle mold
4 cups spinach, fresh, rinsed and drained
3 kiwi, peeled
4 strawberries, greens removed
1 banana, peeled
1 cup coconut water
2-3 drops of stevia (optional)
Gather your blender and popsicle molds (Dixie cups and popsicle sticks work in a pinch).
Wash your spinach, peel your kiwi, and remove the greens from your strawberries.
Put banan, 2 kiwi, all the spinach and the coconut water in the blender.
Start on low and over the 60 seconds work your way up to high and blend until smooth. Put half your diced strawberries and kiwi in the popsicles molds and pour in the blender mix until about ¾ full.
Add in more diced fruit and top with the blender mixture. Leave about a ¼ inch of space at the top so the popsicle mix has room to expand when it freezes since this recipe is high in water content. Freeze and you can enjoy in 4-6 hours.
If you have left over popsicle mix, really it's just smoothie, so enjoy!
